mint chocolate chip ice cream cake
Normally I will leave all food related posts to Calli. She is the pro. But this one is just too good not to share! And really, I don’t think anyone could mess it up. I found the recipe on apartment therapy’s the Kitchn. They used vanilla ice cream so if you’re crazy and don’t like mint you do have options ;)
This one would be fun to make with kids – the little kid in me had a little too much fun making this cake. (And making a mess)
WARNING: I strongly advise serving this cake to a room FULL of hungry people to avoid months of tempting leftovers!
Mint Chocolate Chip Ice Cream Cake / Ingredients:
One package Oreos, crumbled
16 ounces chocolate cake
2 quarts mint chocolate chip ice cream, very soft
1 cup chocolate sauce, warmed
1 tablespoon butter
Don’t pull a Jordan and forget to (very lightly) grease the bottom of the springform pan! (ok, I didn’t even notice until I reread the directions – so if you just really want to be like me, it’s okay ;) )
Now that we have that taken care of, let’s have some fun. Did you mix your ice cream with your cake when you were a kid? (or do you now? totally acceptable) You’ll be a pro.
Mix the chocolate cake, 1/3 of the oreos and 1/3 of the ice cream together gently but thoroughly and press into the bottom of the springform pan for your first layer.
WARNING 02: Don’t make this cake at 11am unless you’re okay with eating pure sugar for lunch or you have incredible self control.
I might go with white mint chocolate ice cream next time – for visual purposes.
For the second layer, mix together the remaining ice cream and 1/3 of the oreos… then swirl in 1/2 cup chocolate sauce. Carefully add on top of the first layer.
For the topping, add the rest of the oreos and swirl on chocolate sauce. Don’t forget to enjoy making a mess.
Freeze for at least 4 hours and you’re good to go!
